1. Add all ingredients in a mixing tin.
2. Add ice and shake vigorously.
3. Strain into a chilled coupe.
4. Using the back of a bar spoon held closely over the cocktail, gently float red wine over the cocktail and create a thin layer of red wine atop the cocktail.
5. Garnish with Tarragon and Flamed Orange Zest.
NOTE: For the Flaming Orange Zest, lightly flame the pith (the white part) first. Then holding flame over the cocktail, gently squeeze the orange peel making sure the skin of the orange peel is facing towards and atop the cocktail, but before the flame, so as to express the zest through the flame and over the cocktail. A small flash of flame should come out due to the oils of the orange peel being expressed through the flame. Discard the expressed orange peel. Garnish with Tarragon.
